The renowned Locavore Group is set to make waves in Ubud’s culinary landscape with the introduction of their latest venture, Herbivore.
Anticipated to open its doors this December at the original downtown Ubud venue, the restaurant says it seeks to take diners on an immersive odyssey into the realm of plant-based cuisine, where every dish is a celebration of the richness and diversity of local plants.
In a statement sent to Coconuts Bali, the Locavore Group announced the establishment of Herbivore, marking a significant evolution from its predecessor, Locavore. The group said the transition from Locavore to Herbivore reflects a profound commitment to the culinary celebration of local plant-based ingredients.
“Locavore always had a plant-based tasting menu called ‘Herbivore,’ and we are already committed to exploring alternatives to animal protein and eschewing dairy. Establishing a space dedicated to the exclusive celebration of local plants aligns perfectly with our philosophy,” said Eelke Plasmeijer, Chef Owner of Locavore.
Herbivore promises a departure from convention, offering an exclusive “all flora, no fauna” experience, embodying the Locavore Group’s dedication to a local-ingredients-only ethos.
Once open, Herbivore patrons may savor a distinctive, five or seven-course tasting menu crafted by Head Chef Arnaud Hauchon. The menu will feature a harmonious blend of bold and clean flavors, showcasing both iconic and lesser-known indigenous ingredients from the island.
“Our debut menu is designed to be generous and comforting—a gentle, first culinary exploration of local flora, with bold and clean flavors from the island’s most iconic ingredients mingled with lesser-known and wilder ones. It’s a warm welcome to restaurant Herbivore,” said Hauchon.
Locavore recently bid farewell after a decade-long presence in downtown Ubud. However, this closure marks the beginning of two exciting projects for the Locavore Group. Alongside the unveiling of Herbivore, the group is preparing to launch Locavore NXT in a nearby location, scheduled to open its doors in December 2023.
