Try the flavor-packed vegan lasagna at this Ubud cafe and thank us later

COCONUTS HOT SPOT — With the world’s largest raw food community per square meter, almost every eating joint in Ubud offers some kind of vegan and/or raw food item on their menu. We’ve heard of awesome salads and amazing smoothies, but when people talk about Seeds of Life, they rave about unreasonably delicious warm vegan lasagna! What?!

They actually have two versions of vegan lasagna: Mexican and Italian. The Mexican version consists of of beetroot pates in place of the usual pasta, with layers of corn tortilla, mango salsa, cashew sour cream, slices of avocado, and “rawmesan” cheese—which is the vegan substitute here for parmesan cheese made out of walnuts, sunflower seeds, and other non-dairy ingredients.

The Italian version (which is only available on Mondays as part of their daily specials) is made out of layers of zucchini smothered with “rawkus” nut cheese, tomato napoli sauce, “wholesome vegan filling”, spinach layers topped off with the yummy rawmesan cheese. While both versions are awesome, the Italian version more closely resembles the traditional omnivore version of the dish, but the Mexican one also offers a delightful burst of flavor.

Other daily specials are the Middle Eastern Plate with hummus and falafel on Tuesdays, Korean bibimbap on Wednesdays, South Indian Vegetable Curry on Thursdays, vegan Nigiri Sushi on Fridays, Mexican cacao mole and salsa on Saturdays, and American Diner Burger on Sundays.

Another cool Ubudian thing on offer here is the Taoist Tonic Bar, which serves a variety of ancient elixirs to balance the Yin and Yang elements of your body. If you get confused with the jing, qi, shen, and adaptability candle-shaped charts on their tonic bar menu, just consult with their in-house expert. It’s a fun and unique experience in and of itself!
