One Michelin-starred restaurant Whitegrass to close for good in Dec, with a new concept taking its place

To cap off a year of notable restaurant closures — fare thee well: Artistry, Joel Robuchon Restaurant, Osteria Mozza, Pizzeria Mozza, Marmalade Pantry Ion, Blackwattle, and Wild Rocket — another well-known name is shuttering in December.

Come Dec 22, one Michelin-starred Whitegrass will close for good, after three years of serving up a modern Australian fine dining experience in Singapore. The 70-seater, which first opened in January 2016 at Chijmes, received its star the following year and held on to it in 2018.

However, even though the restaurant is running at peak performance, its investing partners have decided not to renew its lease, Whitegrass said in a press release. Chef-owner Sam Aisbett explained that “it was a really difficult decision, because the restaurant is doing very well and we have assembled such a strong team.”

“Whitegrass has fulfilled my dream of elevating the status of modern Australian cuisine, with its Michelin and 50 Best wins. Now we are eager to push the boundaries further, and in order to do that, we need a space that allows the team to be more experimental and focused,” he added.

Nevertheless, it’s not all doom and gloom, because Aisbett will be back in the first half of 2019 with a new concept that continues to spotlight his culinary style. Watch this space for updates.
