Singapore’s 2018 Michelin Guide features 5 new one-starred restaurants but no three-starred ones

After all that speculating about this year’s Michelin Guide Singapore — especially in the wake of our country’s sole three-starred spot shuttering in June — turns out none of the businesses on the island were deemed worthy of taking that coveted accolade (that comes with gruelling demands to maintain standards).

And so, the third edition of the list features 44 stars spread across 39 restaurants, with five new names receiving their first star: modern Australian joint Burnt Ends, chef Ivan Brehm’s Nouri, Jiang-Nan Chun at Four Seasons Hotel, French eatery Ma Cuisine, and Sushi Kimura by chef Tomoo Kimura.

In total, 29 restaurants held on tight to their one-star award, including the two crowd favorite hawker stalls —Hill Street Tai Hwa Pork Noodle and Liao Fan Hong Kong Soya Sauce Chicken Rice & Noodle — which means we’re still the home of the world’s cheapest Michelin-starred meal. Go us.

However, Osia Steak and Seafood Grill at Resorts World Sentosa lost its one star, and the two-star line-up looked a little emptier than last year, as a result of Restaurant Andre bidding farewell to us in February and L’Atelier de Joel Robuchon closing in June. So on the two-star side, the list saw no new entrants, sticking with the same five: Les Amis, Odette, Shisen Hanten, Shoukouwa, and Waku Ghin.

As usual, the awards are doled out based on anonymous Michelin inspectors rating establishments based on quality of ingredients, mastery of cooking techniques and flavors, projection of chef’s personality in cuisine, value for money, and consistency over time and across the menu.
