New menu at Crystal Jade Prestige includes colourful dim sum and matcha lava buns

Crystal Jade Prestige knows you don’t wanna be stuck eating the same stuff all the time, so it’s revamping its menu to feature new creations alongside dishes from sister establishment Crystal Jade Golden Palace, which recently received one Michelin star from the guide book’s first edition in Singapore. 

As you admire the view of Marina Bay, start off your meal by ordering chilled organic tomatoes injected with sesame sauce ($10.80) for a refreshing appetiser, or try the chilled cordyceps flower and shredded Japanese cucumber with black garlic ($11.80).

Next up, dim sum. And these are not your regular dumplings — the Prestige Signature platter ($10.80/four items) features colourful steamed ones containing prawn and carrot with black truffle, mushroom, osmanthus with prawn and celery, as well as water chestnut with olive and parsley.

Then there’s the highlight of the meat dishes — the classic pipa duck ($18-$48) and prestige pipa duck ($18-$48), where the bird gets marinated for 10 hours in a homemade spice blend, blanched and basted with golden maltose sugar and vinegar, then air-dried for 10 hours before it’s roasted. An additional layer of fermented beancurd sauce is spread on the prestiga pipa duck for extra goodness. And if you can’t make up your mind which one to order, just go for the best of both worlds ($48/whole).

Other options to share include stir-fried claypot assorted mushrooms with basil leaves ($22-$44), braised beef with yam and red dates ($28-$56), and grilled cod with lemon lime salt ($16.80/person). Carbs come in the form of crispy noodles nestled amongst seafood and veggies doused in ‘superior sauce’ ($12/portion), and the fried rice plate of eggs, pickled radish and salted fish ($20-$40).

But remember to save space for desserts, because you’ll wanna get the steamed pandan buns ($6.80/four). Slightly sweet and slightly savoury, the fluffy buns break open to reveal a molten matcha and salted egg yolk custard that will leave you wishing you ordered the entire basket for yourself.

Alternatively, for a refreshing end to the meal, try the coconut jelly with fresh milk ($8.80) — it’s served in a coconut husk, so you can dig out all the coconut flesh you want.

Otherwise, there’s the plate of yam ($13) that’s fried in bits of sugar to add a sweet crunch to every bite.

As for the specialties from Crystal Jade Golden Palace, dishes include chilled yellow cream crab ($11/100g), sautéed crab with egg white ($38-$76), and baked lamb rack with red wine and black pepper ($19/person).
