Fiesta into the night with Spanish tapas and sherries at the spruced up FOC PIM PAM

Spanish tapas is all about the experience — the vibrant atmosphere, the knockout flavors, the drinks with a kick. And at the newly spruced up FOC PIM PAM, it makes for quite the afternoon (or evening) when you join in the fiesta at the Spanish bodega-inspired space that brightens up the corner of Orchard Road.

Welcoming you into the restaurant is a new color palette of blacks and greys, highlighted with timber finishes and metal elements, as well as a retail section displaying everything from wines and cold cuts to olive oils and premium tinned seafood from Spain.

You can choose to find a perch at the tapas bar, hang out at the terrace, get cozy in the main dining area, or throw a party in the private dining room. Just don’t hold back on the booze, ’cause FOC PIM PAM boasts a wine list of more than 150 labels, an impressive selection of gin and tonics, and a massive collection of sherries sourced from across Spain.

As for the new menu additions, get ’em to share, ’cause you’re gonna wanna try everything. Highlights include the refreshing tomato tartare (like a vegetarian version of beef tartare with tomato ice cream and berry capers), fresh burrata on a bed of baby spinach and Ibérico ham, pig tripe stew with pig ears, trotters, chickpeas, and chorizo slices thrown in, leek salad topped with anchovies, and cherry gazpacho with a dollop of olive oil ice cream.

Of course, fan favorites remain, among them the likes of croquetas with ham, mushroom, crab, or spinach and pine nut fillings, and squid ink paella with prawns and Spanish black rice.

Don’t forget to save space for dessert as well — you can go for an indulgent last course with the Chocolate Forest, a plate of chocolate textures, yogurt custard, white choc passion fruit jelly, and pistachio sponge, or sink your teeth into white chocolate coated churros sprinkled with freeze-dried raspberries.

Alternatively, the lemon lemoncello with limoncello sorbet atop a perimeter of meringue is light and zesty, and the Spanish french toast topped with vanilla ice cream makes for quite the warm and comforting end to your meal.

If you’re not keen for the party to end so soon, head over to the newly constructed alfresco terrace for some chillax time with an alcoholic beverage in hand.

Oh, and for those who plan to pop by on selected Sundays, the new La Boqueria Market Brunch ($88-$128) is a festive time filled with a spread that includes market-style “live” stations and, of course, table-side servings of tender suckling pig (complete with smashed plates).
