Antoinette hits refresh with a new series of souffle pancakes, pretty cakes, and savory dishes

The times, they are a changin’ for Antoinette, with the upcoming closure of its Mandarin Gallery store before its shift to a space in Millennia Walk in July. Meanwhile, the patisserie’s Penhas Road outlet is undergoing a sweet and savory transformation, bringing in new soufflé pancakes, cakes, and French bistro-style dishes.

First up: those jiggly soufflé pancakes, which can rival any of the trendy Japanese joints that’ve made their way to our shores. Thick, yet impossibly light and fluffy, each stack can be paired with savory options like omelette and mushroom sauce ($16) or omelette with serrano ham and drippings of Hollandaise ($18).

If you’re more in the mood for something sugary and creamy, the crème brûlée ($16) layers vanilla custard over the pancakes, with torched caramel and strawberry chunks.

But we’d recommend the classic vanilla Chantilly with strawberries and blueberries ($16) for a light treat, or the ondeh ondeh-inspired ($16) version slathered in a beautiful pandan custard, with gula melaka syrup and coconut flakes.

Before you move on to the sweets, fill up on new dishes from the all-day menu, with bites for the peckish like schiacciata ($18) stuffed with melty camembert, pecorino, and truffle bits, served with a sunny side-up and leafy greens.

On the heartier side, you’ve got a choice between Burgundy beef stew ($16), wagyu beef cheek tagliatelle ($28), French chicken and sausage casserole ($22), and pork belly confit with braised savoy cabbage and apple purée ($28).

Save space, though, for the five new desserts that are elegant and intricately designed in Antoinette’s signature style.

Fans of hojicha can try the Kyoto ($9/$42.50/$85), made with hojicha mousse, orange confit, Okinawa black sugar sponge, and black sugar creme Chantilly. Or order the picture-worthy Fluffy ($13/$49/$98), a gorgeous cloud-like creation with a dusting of pale blue over white chocolate mousse, kirsch-soaked almond genoise, strawberry cremeux, and passionfruit lemon jelly.

Among the confections, the Bananier ($9/$42.50/$85) stands out for its blend of dark chocolate and caramelized bananas. It’s rich yet not overwhelmingly sweet, with a crunch provided by the milk chocolate feuilletine and a center of rum-flambéd banana.

For classic flavors with a twist, the Earl Grey bubble tea cake ($9/$42.50/$85) gets in on the pearl-obsessed trend with salted cream cheese Chantilly on tea-infused cake, topped with mango chunks and tapioca orbs steeped in Okinawa black sugar syrup. Then there’s the Velvet Rouge ($9/$42.50/$85), a rendition of the red velvet cheesecake with salted caramel creme Chantilly.

It’s definitely not the kind of place you visit when you’re counting your calories, so you’d best pick your cheat day to swing by and indulge in a sugar rush.
