Ian Carandang’s summer series for his artisanal ice cream brand Sebastian’s, has become as anticipated as the season itself. Not a surprise there because his frozen treats are that good. We don’t know how he does it but always, the flavors he comes up with are both inventive and indulgent.
 
There are two new lines he’s releasing today: the Truffle Bars and the Fruitsicles.

The Truffle Bars line is inspired by the idea of biting into a deceptively simple shell of chocolate and having gooey fudge burst into the mouth, says Ian. He perfectly describes it as “the ordinary, unadorned exterior, a contrast to the surprise within.”

The colorful and multi-layered fruitsicles, on the other hand, was born out of the six-layered Rainbow Pride pops he released months back. “I learned that there was such a thing as Ice Pop architecture. Using regular popsicle sticks ended up with layers that were not connected to the stick. They broke off even when in the bag. It needed to form around the stick to stay secure.”

He easily got around that one and discovered a way to make it work. Then he pushed the envelope further: He wanted to see how many layers he could stack in a single stick. After a number of experiments, he ended up with 30. Yep, 30 layers in one. And it painstakingly takes three days to make.
 

Thank God there’s Ian to take care of this business for us. All we then have to do is sit back and lick away.  
 
The fruitsicles are priced at PHP85, while the truffle bars are at PHP125.
