Chef of Michelin-starred hawker Hong Kong Soya Sauce Chicken Rice brings his food to NYC pop-up

If you were beaming with pride at the announcement of two humble hawker stalls making it to this year’s inaugural Michelin Guide in Singapore, you’ll be pleased to know that Chan Hon Meng — the owner of one-starred Hong Kong Soya Sauce Chicken Rice and quick service eatery Hawker Chan — recently made an impression on the fine dining scene in New York City. 

Tiger Beer was the company that brought together the 52-year-old chef with Christopher Kostow of The Restaurant at Meadowood in Napa Valley — a three-starred constant on the Michelin Guide. On Chan’s first trip to the US, the pair whipped up a storm over three nights at Indochine restaurant in downtown Manhattan for Tiger Streats. 

Kostow crafted a whelk lasagna dish (with the shellfish mousse sandwiched between seaweed pasta with broccoli and whelk broth), and Chan served up his now-famous soya sauce chicken rice. For dessert, both chefs got together (via Skype) to come up with a coconut pudding with glutinous rice balls and red bean dish.
