Seems like everyone’s going nuts over nasi lemak in the lead-up to National Day. First, there was McDonald’s, which inspired us to make our own, then The Beast jumped on board with a rendition that sandwiched everything between deep fried coconut rice ‘buns’. Oh, and Malaysian joint myBurgerLab threw down the gauntlet by announcing its own version to challenge McDonald’s Singapore’s. Also, there’s a nasi lemak tea that’s been around for a while now, if you haven’t heard.
Well, here’s another concept to add to your list of ‘dishes featuring nasi lemak with a twist’. Wildseed Cafe and Bar, a quiet eatery that’s part of multi-concept space The Summerhouse at Seletar Aerospace Park, is offering a locally-inspired brunch for National Day week, with dishes such as the Atas Kaya Toast ($8) — an upmarket take on the breakfast staple with sourdough toast, kaya, house-made butter, gula melaka, sous vide egg — with a higher price tag to match.

Then there’s the Nasi Lemak Hash Brown ($10) — a hash brown patty topped with pandan coconut, sambal mayo and cucumber — that sounds like it’s, er, missing the nasi (rice) part of the dish… as well as the meat, egg and ikan bilis. Anyway, if you have more of a sweet tooth, try the Milo Dinosaur Softie ($6) or Strawberries & Cream Ice Cream Sandwich ($6.50).

When night falls, dinner items on the menu include bak chor linguine ($18) and wagyu satay ($14/four sticks), alongside cocktails like Kopi-Oh ($12) made with espresso, cointreau, five-spice syrup and Galliano ristretto, and Bandung Padawan ($12), a mix of rose syrup, spiced rum, Frangelico, full cream milk and chocolate bitters.
