Soufflés aren’t the easiest to find in Singapore, and even then, they’re mostly of the standard chocolate or cheese variants. But one restaurant in Duxton Hill is taking on these tricky French creations in its dedication to the classic dish, puffing those egg whites up with sweet and savory renditions.
Aptly called Soufflé, the 48-seater eatery opened earlier this year and claims to be the first and only one of its kind in the country. Each of the six sweet and five savory recipes are made to order, resulting in light, fluffy, and airy bites that you can dig into at the Parisian bistro-inspired space.
To start, the range of savory treats incorporates béchamel into whipped egg whites, with a traditional cheese option ($18) and more unconventional ones like the lobster soufflé ($28), drizzled with lobster bisque and topped with a piece of the crustacean’s claw.
Plus, influenced by local flavors, the laksa soufflé ($23) is studded and topped with prawns, then drenched in the familiar sauce that has just a tinge of heat.
Even the mains are paired with mini soufflés of their own, like the duck confit and mashed potato with truffled mushroom soufflé ($32), or the boeuf bourguinon of slow-cooked beef cheek in red wine with a comté soufflé ($32). To sample a bit of everything, you can even order a tasting flight of three mini ones ($32) from options like truffled mushroom, roquefort, comté, laksa, or lobster.
On the sweet side, the kitchen douses its soufflé in Grand Marnier and infuses it with candied oranges ($23), even giving each table a bottle of the booze to soak the dessert in as much alcohol as they’d like. But if you prefer a sober, iced version, try the citrusy lime one that’s encrusted in fellutine ($18) for a refreshing finale.
Oh, and those looking for a nice sit-down meal can try the new two- or three-course set menu, where you get to customize your plates by choosing from 22 options off the a la carte line-up. The two-course one (from $45) gets you a starter and main or main and dessert, while the three-course one (from $58) takes you from appetizer to main to dessert.
A lunchtime soufflé tasting flight is available as well, consisting of three mini cups and one little sweet soufflé ($28), which you can get from noon to 3pm on weekdays.
