If Mount Faber and its restaurants are a little too high up for you, head down to the foot of the hill to hit up new watering hole Propeller for sweeping views of Sentosa and Keppel Harbour. It’s apparently the first rooftop bar in the Harbourfront area, and it’s nestled at Bay Hotel Singapore, the building opposite VivoCity. If you happen to pop by at the right time, you may even see fireworks across the Sentosa Boardwalk.
On the cocktail list are signature concoctions like Propeller Bay ($19), a mix of vodka, orange juice, raspberry syrup and thyme; Mozartz ($19), a sweet drink with a bittersweet aftertaste made with chocolate liquor, Campari, Carpano Antica Vermouth and orange foam; and Date with Hendrix ($14.90), a blend of Hendricks gin, crushed dates, lime juice and triple sec.
There’s also a mini edible garden in the hotel, which furnishes selected drinks with its herbs.
Food-wise, the tapas menu offers small bites like pan-seared scallops with fennel salad ($9.50), crabmeat creole ($8.90), beef cubes with truffle mayo ($9.90) and a cheese platter ($14) to go with your wines.
All in all, Propeller’s a pretty standard place, as far as bars go. But if you’d like to avoid the tourists at Sentosa or the rowdy crowds at St James Power Station, this is a safe bet for a chill evening.
