Local spirits-maker Compendium Spirits has finally set up shop in one of the most bustling streets for watering holes in Singapore.
Called Anthology, the three-storey shophouse will offer its full range of spirits and experimentations such as more localized flavors like the popular Chendol Gin, Teh-O Liqueur as well as its unique whiskey made from Thai Hom Mali rice.
Simon Zhao, co-founder of Compendium Spirits, and his team have been using traditional methods to create world-favorite spirits since 2015.
For the opening, the bar’s menu will include cocktails inspired by classics such as the Teh-groni (S$21) which uses their Teh-O Liqueur, Campari, earl grey tincture, and finished with a spray of lavender citrus; the Meadmosa (S$20), made with Apricot Tea Mead, orange juice, pomelo syrup and brut Champagne; and the Rojaktini (S$24), a composition of rojak gin, bianco vermouth, pink peppercorn and orange bitters.
You can even go for their Anthology Somaek (S$18) where you will be mixing a fermented alcoholic beverage and one of their sojus.
But it’s not just a place to drown yourself in their concoctions, as the bar dedicates the upper floors to host exclusive themed workshops and lets guests customize and barrel-age spirits from scratch.
For those eager to learn about the production process, several tasting flights like the Rice flight (S$42), Fermentation (S$15) and the Aged (S$40) are available.
The bar’s Southeast Asian influences expand to its food menu as well. Try the Beef Short Ribs Char Siu paired with homemade rice crisps, the Braised Duck Rillettes made with croutons, seasoned with Asian spices and topped with chopped chives or the Crab Salad with Ginger Crisps.
