Secret’s Out: Singapore getting our own Potato Head in June

PTT Family, the hospitality and entertainment group renowned for the internationally acclaimed Potato Head Beach Club in Bali, as well as the Potato Head and Potato Head Garage restaurants in Jakarta, will be opening its first international outpost right here in Singapore.

Launching in early June, the Potato Head Folk will have the intimate feel of a private house complete with a ‘kitchen’, ‘living room’, ‘studio’ and ‘rooftop garden’.

The ‘kitchen’ on the ground floor is part of the Three Buns burger restaurant, which is supposed to be reminiscent of a buzzy Singapore hawker centre with outdoor seating. The menu will be made up of homemade gourmet burgers courtesy of Chef Adam Penney, who was recently behind the enormous success of London’s Patty & Bun, plus sides, signature sodas like cola and sherbet lemonade, and cocktails. Penney, who’s been dubbed ‘the hip hop chef’, will be serving up creations like The Baby Huey (see photo below) — a prime 150g beef patty with cheese, lettuce, his Notorious T.O.M Sauce, pickles and spiced mayo — all named after icons of the music scene.  Three Buns will also serve Penney’s renowned dessert pots from his own company Pots & Co. in flavours like Rich Chocolate and Zesty Lemon. Cocktails at Three Buns are created by world-renowned mixologist Dre Masso.

Three Buns extends into the second floor, where Potato Head Folks’ ‘living space’ is. It’s expected to play the role of a networking venue of sorts with a comfortable set-up and decor by Australian artist David Bromley. Many of the designs you’ll see here are handmade in Bali, which points towards the venue’s overall direction — to support the local arts community. Aside from providing Three Buns’ full menu with table service and coffees and pastries, the second floor will also host a programme of performances and exhibitions by local and international artists.

On the third floor is Studio 1939, a bar expected to make guests feel like they’ve entered an artist’s private studio — it is, after all, inspired by Bromley’s own Melbourne digs. Named in recognition of the four-storey art deco building that houses Potato Head Folk, the bar showcases modern art selected by Bromley, as well as pieces reflecting Chinese heritage. The food menu will consist of some Singapore exclusives, while the drinks list will boast Dre Masso and his team’s personal favourites, as well as a collection of wines from the world’s more unusual locations. Studio 1939 will be open daily from 5pm — 1am and is reservations only.

The final venue within Potato Head Folk is the rooftop Tiki bar — everything from the decor to the rum cocktails served in wooden bamboo and coconut cups, is reminiscent of the lightly Polynesian, famously American drinking culture. The rooftop garden will also host Folk Gatherings, a series of dinners that will see guest chefs from within Singapore and around the world, whipping up culinary magic from specially imported ingredients accompanied by performances.
