Popping up for a month at The Clifford Pier, this Peranakan spread by guest chef Philip Chia features hearty dishes for you to savour by the waterfront. Think favourites like babi pongteh (braised pork with mushrooms, bamboo shoots and potatoes), ayam buah keluak (braised chicken in rich spices) and Nyonya chap chye (mixed veggie stew).
The à la carte menu also offers bakwan kepiting, a soup of meatballs filled with pork, crab meat and bamboo shoot; itek sio, duck braised in a tamarind and roasted coriander sauce; as well as ayam pedas siam, a spicy chicken curry.
The Peranakan menu is available for lunch and dinner from Aug 1-31 at The Clifford Pier, The Fullerton Bay Hotel Singapore, 80 Collyer Quay. $18-$26 per dish.
