In the iconic hawker centre of Old Airport Road, Eric Teo prepares a unique rendition of traditional seafood soup that includes handmade meatballs. Those meatballs are carefully boiled together with prawns and bits of fish, resulting in a comforting broth that’s chock full of umami flavor — the perfect accompaniment to a bowl of white rice.
The enterprising hawker reveals that he conceptualized his reinterpretation of seafood soup, when he realised that his classic mutton soup was no longer popular with young Singaporeans. Reinvention has helped this hawker of 18 years keep his traditional soup recipe alive while attracting the younger generation to visit hawker centres.
