COCONUTS HOT SPOT — Jade Restaurant has been around in its sweet spot at The Fullerton Hotel Singapore for nine years, serving up Cantonese cuisine by the waterfront. After a recent facelift, the space is even more warm and welcoming than before, with a new concept inspired by the Tang Dynasty dramatic work, ‘A Variety of Tunes From the Story of the Western Wing’, which features the couplet: “I invite you to a feast of eight precious treasures, with a thousand words to convey my well wishes”.
But don’t be scared off by the reference — Jade isn’t decked out like any other traditional Chinese restaurant. Far from being stuffy or old-fashioned, the interior features gorgeous pastel jade tones, bird and floral motifs, and ceramic sculptures. It’s almost reminiscent of one of those pretty afternoon tea spots, especially if you dine at the restaurant during lunch time, when the high-ceilinged space becomes brightly lit and inviting.
Oh, and Chef Leong Chee Yeng, who helms the kitchen at Jade, isn’t just skilled in the culinary arts. He’s also a talented ceramicist, Chinese painter and calligrapher — look around the restaurant and you’ll find 18 unique ceramic works crafted by the man himself.
To reflect the ‘Eight Treasures’ theme, the menu features eight signature dishes, including melt-in-your-mouth pieces of crispy roasted pork belly ($14/person), deep-fried prawn with wasabi mayo ($14/person), sautéed diced beef tenderloin with crispy garlic ($23/person), as well as egg noodles with Boston lobster and XO chilli sauce ($39/person).
And if you’ve never treated yourself to Jade’s dim sum à la carte weekend brunch ($39/adult), find a special occasion to celebrate and pop over to the restaurant for a selection of 55 items including crispy prawn dumplings, baked fresh milk buns, steamed pork siew mai with abalone, lobster congee, pork ribs with coffee sauce, man tou stuffed with chilli crab meat, and egg tarts.
