A new amateur chef takes over the kitchen at Kilo Kallang for one night in September

Amateur chefs have come and gone after their Kilo Kallang restaurant takeover. Next up for the sixth in the restaurant’s Under Pressure series is Clay Kuok, an art director from Macau who currently lives and works in Singapore. 

Her first dish was made from following instructions on a jar of spaghetti sauce. “I was 12, I was hungry, and I was happy I never had to eat another tray of microwaved rubbish ever again,” she said.

Almost two decades later, Kuok has cultivated a love for food, often spending weekends experimenting with dishes in the kitchen. On the menu at her takeover are dishes like chilled watermelon gazpacho, kra pao quail’s scotch eggs with green mango and guava som tam, as well as squid noodles with tonkotsu and shrimp head broth. Following all that is a quick palate refresher of sugarcane and gin slushie with hints of citrus, then come the mains of Balinese braised pork with homemade sambal, fried corn and tempeh, as well as a mixed bowl of sushi rice, paella and fried rice. 

To end off the meal, there’s coconut and basil panna cotta with sprinklings of coconut pistachio brittle.
