Michelin-starred Singapore hawker to open first restaurant by mid-November

One of the two hawkers awarded one Michelin star at this year’s inaugural edition of the Michelin Guide Singapore is moving on to bigger things. Liao Fan Hong Kong Soya Sauce Chicken Rice and Noodle, run by chef Chan Hon Meng, is partnering with Hersing Culinary to open its first restaurant by mid-November.

Named Hawker Chan — after Liao Fan’s owner — the fast food eatery will serve up the same soya sauce chicken rice and noodle dishes, but in an air-conditioned space at 78 Smith Street. Chan’s wife and family members will helm the hawker stall, while Chan will divide his time between the two. Prices at the new restaurant are said to be close to ‘food court prices’.

Hersing Culinary also owns the franchising rights to Hong Kong’s Michelin-starred dim sum restaurant, Tim Ho Wan. It will also open another Michelin-starred restaurant, Tsuta, at Pacific Plaza on November 6.
