Fireless Kitchen: New sous vide concept that lets you build your own protein bowls

A kitchen that steers clear of fire, you say? No, it’s not one of those raw vegan places; instead, Fireless Kitchen is a build-your-own protein bowl concept, the kind that’s popular with the busy weekday lunch crowd that seeks out healthy eats.

Located in a little corner of the recently reopened Funan, the small eatery uses a culinary technique called sous vide to prep its ingredients.

For those unfamiliar with the term, it’s a method that cooks food at precise temperatures for long periods of time. Basically, the item is vacuum sealed in a plastic pouch and placed in a water bath that’s regulated at a specific temperature, so as to achieve the exact level of preferred doneness. That way, you get a consistent quality without crossing the line to undercooked or overcooked food.

Apart from the sous vide approach, Fireless Kitchen works pretty much like any other healthy bowl joint. You pick your protein, then your base, and add a bunch of sides to it for a fuller meal.

Prices here start at $10.90 for the vegetarian option of chilli garlic tofu, and $11.90 for the chicken pesto. Other meats include lemon herb salmon ($15.90), marinated beef ($14.90), and BBQ pork belly that’s luxuriated for 12 hours in the sous vide water bath ($13.90).

Next, carbs and greens include sweet potato mash, whole wheat pasta, brown rice pulao, butter lettuce, kale (for an extra $0.50), and quinoa (an additional $1 charge).

To complete the bowl, choose three “companions” from an assortment of miso-glazed carrot, crispy garlic broccoli, honey roasted pumpkin, balsamic onion confit, edamame, baked pineapple, sous vide egg, and corn salsa.

If you’d prefer to eat light, the list of leafy green bowls range from Sid’s Summer Salad ($11.90) of egg, lettuce, avocado, watermelon, pineapple, and cherry tomato, to Take My Heart ($14.90), a mix of salmon, romaine heart, feta, asparagus, and cherry tomato. Top it off with a drizzle of honey mustard, basil vinaigrette, Caesar dressing, or soy sesame vinaigrette.

The menu also offers a simple selection of drinks such as green tea ($2.50), coconut water ($3.90), cloudy apple juice ($4.50), and organic lemonade ($3.90).
