An underwater-themed dining spot is reopening with a new chef swimming into the kitchen with two Michelin stars in his net.
Ocean Restaurant at Resorts World Sentosa is back with a new look, menu, and chef for a fine-dining experience surrounded by views of S.E.A. Aquarium’s 40,000+ marine animals.
The restaurant beneath the Equarius Hotel is now helmed by Olivier Bellin, owner of the two Michelin-starred L’Auberge des Glazicks restaurant in France.
“Together with Ocean Restaurant’s culinary team, we want to create an immersive dining experience that conveys the beauty of the ocean and the need to protect the environment, and imprint a strong, emotional impression on our guests,” Bellin said in a news release.
Guests are greeted by a bar at the entrance where they can pre-game with bespoke, French-inspired cocktails. There are also more than 400 wine labels available.
The 50-seater’s blue and stone interior with textured glass bricks mimics rippling water. It also takes visual inspiration from the majestic manta ray.
The new food spread centers around modern European cuisine with, of course, seafood they say is responsibly sourced and paired with local- and house-grown herbs. The menu also emphasizes the “fresh natural and healthy flavours of the sea.”
Its three-course lunch menu (S$148) starts with appetizers like Hamachi, breaded frog legs and lobster soup before moving on to mains such as seared red snapper and Wagyu beef. Desserts include a strawberry tartlet and brown butter roasted pear.
The four-course dinner menu (S$248) starts with a Bivalves tartare, poached half lobster soup, then slow-cooked monk fish and haddock, as well as pigeon with air-dried pork belly. Desserts include red berries Pavlova, Matcha tea cream, and raspberry ice cream.
