Dine with a sunset view at Faber Peak’s new hilltop restaurant

The newest concept at Faber Peak Singapore, Dusk Restaurant and Bar is nestled 100m above sea level, offering panoramic views of its lush rainforest surroundings, Harbourfront, Sentosa island and, of course, nightly sunsets.

Specializing in European tapas, the eatery features an alfresco garden section and a sheltered area, with a 9.6m-long bar by the entrance studded with plush sofas overlooking the entire space.

Start off with appetizers like foie gras au gratin ($20), which tops duck foie gras marinated in sweet dessert wine on crunchy baguette slices with truffle balsamic pearls, then move on to the citrus Fremantle octopus ($25) served with tomtoes and arugula.

As for the mains, signature dishes include the tiger prawn capellini ($28) of angel hair pasta tossed in lobster-infused oil and Japanese seaweed, as well as the côte de boeuf ($98/two) featuring a 700g hunk of prime rib cooked sous vide and grilled before it’s plated up with roasted marble potatoes, buttered veggies and red wine sauce.

Desserts come in the form of the flambé baked Alaska ($16) and the ricotta cheese cake ($14).

To complement your meal, wines are priced from $13 for reds and whites, and from $12 for a glass of bubbly. If you’re keen to try the cocktail concoctions, there’s the signature Dusk Till Dawn ($16) of gin, vodka, rum, tequila, blue curacao, lemon juice, and peach syrup; or you can try the Nitro-frost Caviar Martini ($16) in flavors like lychee and passion fruit.

Dusk Restaurant & Bar is at L2, Faber Peak Singapore, 109 Mount Faber Rd. Mon-Thurs 4pm-11pm, Fri-Sat 4pm-2am, Sun 11am-11pm.
