This cafe in Singapore features bird’s nest in everything from coffee to cakes to macarons

Now that the cafe scene in Singapore is saturated with gimmicky attractions, character themes and whatnot, in flies a new concept. Nesture is all about bird’s nest. Yep, we’re talkin’ the Chinese delicacy in coffee, waffles, panna cotta and all sorts of baked goods.

In a bid to educate patrons about genuine versus fake bird’s nest, the cafe gets its supply from its own house nests in Sumatra, Indonesia, and oversees the entire process from harvesting the nests to packaging the goods. (The owners also claim their bird’s nests have lesser impurities, no chemicals and smoother textures).

If you’re intrigued by the concept and you’d like to start slow, some of the bird’s nest desserts to try include gula melaka creme brûlée, orh nee (yam paste), almond cream, macarons and cakes like mango and passionfruit or lychee and rose. Otherwise, you can’t go wrong with drinks like honey lemon or ginseng with rock sugar — both have bird’s nest added into the mix. You can also get your afternoon cuppa with bird’s nest, but that’s more of an acquired taste, especially if you’re a coffee purist.

Take home jars of ready-to-eat bird’s nests are also available in flavours like osmanthus and rock sugar or wolfberry, red dates and rock sugar.
