MSG-free Japanese noodles at Uma Uma Ramen

COCONUTS HOT SPOT — Metro Manila is not wanting for places to enjoy good ramen noodles, but that doesn’t mean we can’t leave space for another one like Uma Uma Ramen.

Uma Uma in Japanese means “tasty” and at this 60-year-old restaurant originally from Fukuoka, Japan, flavors are achieved without the use of MSG. 

“Our broth is made from a rich broth of pork bones, slow cooking over high heat to achieve the distinct and robust flavour infused through hours of cooking. It’s 100% MSG free.” says Russell Yu, director of Singapore’s Iki Concepts Ltd, which brought the concept to Metro Manila. 

The restaurant is also in Bangkok, Thailand.

Uma Uma doesn’t just serve ramen, however. They also have 11 types of yakitori and kushikatsu — think crispy chicken skin (tori tama) and chicken soft bone (nankotsu) — served with homemade sauces.

But if ramen you must, try out the signature dishes, like a dry-style ramen originally created for the Singapore branch that eventually made its way to Japan (mazesoba), the signature Uma Uma ramen, and BBQ pork (chasiu) don.

Horse’s Mouth Bar, from Singapore, has also crafted a special drinks menu for Uma Uma in Pasay City, featuring a mixture of classic cocktails as well as specially created drinks to celebrate its first foray into the Philippines!
