We’ve already laid out the roster of Spanish celebrity chefs flying in, the list of the Manila-based chefs participating in the event, and their topics of discussion.
Well, here’s a bit more good news. Two celebrated Asian chefs are joining Madrid Fusion Manila, taking the stage to share their knowledge. Get to know them.
1. André Chiang

He’s the chef behind Restaurant André, ranked 6 on San Pellegrino’s Asia’s 50 Best. André has been rocking Singapore’s food scene for five years now as he continues to create delectable French nouvelle cuisine out of the freshest seasonal produce based on his octaphilosophy. His food is so good that The New York Times even included his place in the list of ten restaurants worth jumping in the plane for. Among the dishes he has become recognized for is the one called Memory, composed of warm foie gras jelly and black truffle coulis.
2. Alvin Leung

This “demon chef” has been serving x-treme Chinese cuisine in his restaurant Bo Innovations in Hong Kong since 2008. Since then, he has gone on to receive major attention and recognition worldwide. His talent for redefining culinary norms and serving dishes that tease the senses has earned him three Michelin stars and a gig as judge in Masterchef Canada. Among his standout dishes in the restaurant is the controversial Sex on a Beach, composed of an edible condom filled with honey and ham mixture on a mushroom beach.
