Plane food reinvented: Singapore Airlines offers ‘Book the Cook’ service

Food preparation for passengers of a commercial flight is often driven by logistics, which is why in-flight meals have earned a bad rep among those with discerning tastebuds, including Anthony Bourdain, who famously said that he would never touch plane food.

The golden strategy for getting something good on your next long-haul trip? Order ahead if you can.

Singapore Airlines has a “Book the Cook” service which allows flyers to pre-order a gourmet dish 24 hours before their flight. The choices include Boston lobster thermidor, Duck confit with mushroom risotto, and other gourmet favorites, depending on the route. The service is available in all classes except economy.

Singapore Airlines food & beverage manager chef Hermann Freidanck explained that their in-flight meals are meticulously planned and changed every two months. They also have a Japanese menu, a Chinese menu, and an Indian menu.

Earlier this year, Singapore Airlines also launched the “Deliciously Wholesome” meals, catered for the health conscious traveler.

Passengers may also request a special meal for medical conditions, religous preferences and other special meals.

Singapore Airlines’ Book the Cook is available on all flights flying from Singapore and from selected stations when flying into Singapore.
