Watch and learn, friends, how the tongue-tingling piri piri sauce is made at Portuguese restaurant Gostoso Piri Piri Chicken. Piri piri sauce is best applied in liberal doses to slow-roasted chicken and other grilled meats.
Gostoso is headed by Portugese Joao Branquinho, who has been living in the Philippines the past five years. If he looks familiar to some, it’s because he used to sell piri piri chicken at the weekend market of Legazpi Village.
“Our piri piri sauce is a transformation of a recipe I had in my family. In the Philippines, I use green chili,” says Joao. The sauce is made fresh every week and lifts the flavor of the meat. There are two variations: mild and spicy. “It gives the dishes a different characteristic. It makes them more juicy and easy to eat. It also helps with the digestion.”
