There are establishments far older than El Chupacabra in Makati and yet, in its few months of existence, this hole-in-the-wall Mexican joint off Makati Avenue has already become a legend in Metro Manila’s nightlife.
This is where the city’s hip crowd comes to chill.
Drinks here are cheap, but what people really come here for, aside from the festive atmosphere, are the street tacos.
In this episode of Instakitchen Manila, manager Julian Morado gives us a tour of the kitchen shows us how El Chupacabra makes its street-style tacos.
First he shows us the carne asada taco (PHP80), which is basically steak.
“In Spanish carne means beef, asada means to grill. So our taquero grills the meet on the griddle, and then we have our corn tortillas steamed first so it’s softer and bends easier,” explains Morado.
“And then when it’s cooked, he puts the carne asada on the taco, then he tops it with onions, guacamole, cilanto, and then it’s good to go.”
The tacos are small, can be consumed in two or three bites, and always served on a double layer of tortilla.
The second most-ordered flavor here is the plain sisig taco, which is leaner as there is more meat. “It’s a new twist to our tacos, it has more of the Filipino touch,” according to Morado.
