How to make a Pinoy cocktail with…Amadeo Coffee Liqueur

Coffee to boost your spirits? That’s a great idea.

On this episode of Pinoy Mixology, Mad Scientist Creations owner Kalel Demetrio experiments with Destileria Limtuaco’s Amadeo Coffee Liqueur and comes up with three fascinating cocktails you can easily serve at home — you just need to stock up on alcoholic mixtures like bitters, apertif, ouzo and Very Old Captain dark rum.

Demetrio has been in the industry for 10 years and became passionate with handling local produce ever since he joined chef Rob Goco’s farm-to-table restaurant, Green Pastures. He started his career as a line cook but found his passion in mixing drinks. Apart from running his own consulting firm (Mad Scientist Creation), Demetrio also heads up the research and development for beverages team at Cyma Group of Restaurants.

It wasn’t hard for Demetrio to think up of drinks using Amadeo, an all-natural liqueur with the full-bodied taste and intense aroma of a special Philippine coffee blend using four kinds of coffee beans (Arabica, Robusta, Liberica and Excelsa) in a rum base. The coffee beans are harvested from Amadeo, Cavite, known as the Coffee Capital of the Philippines.

Amadeo Dream

— 30ml Amadeo coffee Liqueur
— 15ml amaretto
— 30ml mastic liqueur
— 15ml ouzo
— 15ml Very Old Captain dark rum

Amadeoretto

— 45ml Amadeo Coffee Liqueur
— 20ml amaretto
— 30ml Very Old Captain dark rum
— 90ml half-and-half milk and cream

 


Barako de Gata

— 45ml Amadeo Coffee Liqueur
— 15ml Very Old Captain dark rum
— 20ml crème de cacao
— 60ml coco milk infused with vodka and organic honey
— 2 orange wedges
— 30ml egg white
