Food News: Purple Yam to join SM Aura’s Weekend Market

From Brooklyn to Manila and now, to SM Aura. Amy Besa and Romy Dorotan’s Purple Yam invades the mall to make their food more accessible to the people. “We want our items to reach another market,” says Besa. “Not everybody will do our degustation. But with this, people will get to taste individual things from our kitchen.”

Starting Nov 21, the stall, located at the lower ground floor of SM Aura Premier, will offer Purple Yam’s signature buko pie, prune cake, pinipig cookies, ginger ale with fruit pop, halo-halo and four-cheese tart. It will also be selling Abra honey and an array of heirloom rice, including the black duck rice from Bukidnon. “They are called as such because the farmers and ducks help each other to produce it,” explains Besa. “The ducks eat the slugs and snails that destroy the rice and their paddling movements also help the rice grow. It’s a collaboration that’s why it’s called that way. It’s organic black rice grown through the help of ducks.”

Amy Besa will fly back to the US in Dec and will return two months after. Purple Yam Malate will continue operations at the helm of sous chefs Rap Cristobal and Pat Benedicto.
