Food News: Kouign Amann Gets A Delicious Makeover

 

In 2009, Brasserie Cicou on Annapolis in Greenhills, San Juan introduced everyone to Kouign Amann, a round, golden brown crusty cake lubricated with lots of butter and sugar. Not long after, word about the classic French pastry got around that pretty much anyone who dined at Cicou would end their meals with this divine and delicious dessert.

Demand has multiplied over the years that chef Cyrille Soenen had to close an area in his San Juan restaurant to turn it into a mini kitchen dedicated solely to producing Kouign Amann.

To bring more of what the people want, Cyrille set up Kouign Aman by Ciciou, an aptly named stall at the second floor of Mega Fashion Hall. On offer are his prized pastry in 12 different flavors:
Glazed (P50) – coffee, lemon, caramel, chocolate
Premium (P55) – chocnut, ensaymada, cheesecake, peanut butter and jelly
Savory (P60) – bacon and cheese, leeks and goat cheese, sundried tomato and basil, chorizo.

This early on, the stall sells 150 units of the freshly baked items a day. Talk about seizing an opportunity!
