Look at this classy version of pinakbet by Chef Ramon. Not only is it presented very well, as if it’s going to be served in a restaurant, it also features some not-your-usual pinakbet ingredients. For example, that long tube in the middle is actually roasted pumpkin and miso puree. Class! According to Chef Ramon, the fermented miso takes the place of bagoong.
