Chef Tonyboy Escalante reveals his favorite restaurants in Metro Manila for Phaidon book

We reported several weeks ago that Tonyboy Escalante of Antonio’s Restaurant has been included in the prestigious roster of the 2015 edition of Where Chefs Eat, a restaurant guidebook featuring tips from more than 600 of the world’s famous and beloved chefs.

It was released by Phaidon early this month and our very own celebrated chef, the first and only Filipino in the group, reveals his top picks.

 
It includes:
 

  • New Harlem Restaurant for its Filipino-Chinese dishes
  • Gloria Maris
  • JT’s Manukan
  • UMU in Dusit Thani Manila Hotel because “the menu is the epitome of elegant simplicity”
  • Terry’s Selection
  • Ramen Yushoken
  • Grace Park, which he writes as Margarita Forés’ restaurant at its best and that he wishes he himself had opened

He also mentions El Quim de la Boqueria in Barcelona as a place he is willing to travel to just to indulge on its fare.
 
Other notable chefs in the book include René Redzepi, David Chang, Jason Atherton, Shannon Bennett, Helena Rizzo, and Massimo Bottura.
