In case you haven’t heard, we’re producing craft beers in the Philippines now.
There’s Katipunan beer (try the Indio Pale Ale), brewed in Pasig, Bogs from Bacolod and, the most varied, Fat Pauly’s from Iligan.
Chef Gene Gonzales recently hung out with a couple of hungry chefs in Davao where they “encountered this mysterious-looking beer with a label of fat cherub urinating.” That’s Fat Pauly’s, made by the same guys behind Pinakurat vinegar.
Such was his dedication to his craft that chef Gene just had to try the different kinds of Fat Pauly’s beer — there’s one with Jamaican ginger (Rastafa), another with Scottish malt brewed with milk and sugar (Bagpipe) and, OMG can you believe it, one with elements of chocolate (Sultana).
Here’s a preview of the chef’s tasting notes:
Desert Rose: With a rich, creamy, thick head, this ale is bone dry and can be paired with anything that has anchovies or fish sauce. Also great with squid dishes.
Bruno: Strong brown with shades of chocolate and brown sugar. It has chocolate bar aromas with a little wet earth. Would be good with milk chocolate desserts and berries, as well as jam-filled crepes or pastries.
