Chef Gaita Fores is featured in Monocle Radio’s The Menu

Liam Aldous, Monocle’s contributing correspondent who is based in Spain, admits to be tired of writing about Spanish food. He has covered much of it and so finding other cuisines featured in the recent Madrid Fusion proved to be a good pool for exciting new subjects.

When he asked Argentinian chef Estanislao Carenzo regarding which presentations at Madrid Fusion he enjoyed the most, Carenzo was quick to mention Kinilaw by Margarita Forés and Myrna Segismundo. “I’m really trying to keep in touch with Filipinas because I think it’s one of the next trends in food because it’s so diverse, much more than we can imagine,” he says.

He took his cue from this and hunted down the chefs to know more about their home cuisine and find out for himself what the buzz is about. Liam dropped by the Filipino booth in Madrid Fusion and asked to be connected to chef Gaita for an interview. Luckily, she was able to spare some time in between preparations for a special dinner she hosted at the Ritz Hotel in Madrid.
