On this episode of Carinderia Crawl we go to Bgy Tejeros in Makati with our 24-year-old host Glen Hare for a classic Pinoy comfort dish: lugaw. Unlike household lugaw, though, the version that Lugawan sa Tejeros sells does not use boiled chicken. Instead, it tops the congee with hardboiled eggs and lechon kawali — it reminded us of Lovers Pares, that other streetside eatery in Makati we featured that makes mind-blowing goto topped with lechon.
Hare is a social media specialist who loves to draw on a sketchbook when she is chilling at home. She’s a visual person, and that’s partly why she is attracted to this well-presented lugaw. The rice is white, the hardboiled egg is split evenly into two and laid out neatly on top, while a slice of calamansi hangs on the rim of the bowl. The generous serving of crunchy lechon kawali dominates the rest of the bowl, as a sprinkling of chopped spring onions and light brown fried garlic breaks the color of deep-fried pork fat.
Fortunately, it tastes as good as it looks and doesn’t cost a lot at PHP40.
