Herencia Restaurant in Paoay, Ilocos Norte, started as a carinderia serving just sandwiches and coffee—until the owners invented pinakbet pizza which would put eventually them in the culinary map.
The original pinakbet dish is a mix of vegetables commonly found in Ilocano backyards steamed in shrimp sauce. The pizza version does not have bagoong but the restaurant will pass you some upon request.
According to owner/manager Olivia Centeno Diaz, the pinakbet pizza was their way of making the vegetable dish more appealing to foreigners. It’s become such a hit that they’ve also started serving other local-themed pizzas with toppings like longanisa, crispy dinuguan and bagnet.
