COCONUTS HOTSPOT – The Brewery at The Palace is the hot new pub to be. Top notch draft beers, quality food, sick beats and entertainment, what’s not to like?

The best part? They open at 11am daily, in case you need a drink that early.

“The brewery is far from your ordinary pub in that we’ve put together the top three things customers look for when they want to have a good time- great food, great live entertainment and of course, excellent beers to round out the whole experience, “ said Raj Sadhwani, CEO of The Brewery.

The 840 square meter pub with a seating capacity of 300 has huge-ass brewing machines laid out strategically for everyone to see. It’s the first thing you’ll see when you enter this massive establishment. Pro-tip: Best to drop by on a Monday because that’s when The Brewery starts brewing.

The coffee-stain-like color — with brewing machine patents, mind — paints the walls a picture of elegance and a time lost. It actually reminds us of those old beer bath pubs in Europe, dimly lit but with huge windows where natural light dramatically streams in. It looks old and rustic, equipped with wooden furniture, with only the brewing machines injecting the modern feel.

Part-owner Rico Blanco curates the music, which is an intelligent mix oc old, new, classic rock, indie, and even EDM.

Make no mistake that the beer and grub are just as good as the aesthetics of the place, if not better. There are four artisanal beers on the list: (1) the Pilsner (starts PHP180) which is a Czech light lager that contains 4.3% with a 4.3% alcohol, (2)the IPA (starts PHP220), which is Sadhwani’s favorite, if that says anything about this malty beer; (3) Brown Ale/ Stout (starts PHP210), which is subtler than the IPA but hints of coffee, and (4) Wheat (starts at PHP200) which, with its fruity profile, is so refreshing! 

When we visited, The Brewery gave us a preview of their upcoming flavors: The Ginger beer is probably the deadliest. The refreshing taste of ginger masks its 7% alcohol content — a real traidor, if you ask us. The honey beer which they served us alongside the dessert, it’s sweeter than all others but still packs a punch.

The pub grub, courtesy of Chef Carlo Miguel, is sensational. We know and love him from Draft, where his drunken mussels and poutine have become routine for us, and and at Brewery, it seems we will be creating new dining habits with his fusion of Asian-American-European cuisine.

While most of the dishes we tried are great, we were strangely beholden to The Brewery’s Cheesecake. Not an automatic bar chow, we know, but it’s infused with beer. How much bar or pub can you get?

Fisherman’s basket (PHP690) is a seafood platter deep fried in Chef Carlo Miguel’s secret batter. Great bar chow, we say.
