Bibingka comes in 13th in ranking of the 50 best cakes in the world

The humble bibingka has been named one of the 50 best cakes in the world, according to a list released by online travel food guide TasteAtlas.

The coconut rice cake ranked 13th on the list, even outranking internationally famous favorites such as Spain’s Basque Cheesecake, which earned the 22nd spot, and the classic American molten chocolate cake, which came in at 35th place.

In first place was the Bulgarian torta garash, a chocolate cake made with walnuts, egg whites, and powdered sugar.

For those who haven’t had the pleasure of eating a fluffy bibingka yourself, it’s a breakfast or afternoon snack staple in the Philippines most popularly consumed during the Christmas season and often paired with coffee or ginger tea. It is made with glutinous rice and coconut milk and baked in a terracotta oven while lined with banana leaves. Salted egg and cheese are added on top of the batter just before it finishes baking, and it is served with grated coconut and some butter or margarine.

The Taste Atlas ranking was based on the average audience scores.

The online food guide has featured the Philippines several times in its rankings: Filipino food ranked 19th in its list of the 50 best cuisines in the world, while lumpiang shanghai and tortang talong were ranked among the best-rated dishes in Southeast Asia.

NOTE: The article originally stated that the bibingka came in the 12th spot. This has been updated to reflect its actual ranking.
