We’re not saying that a perfectly-assembled grilled cheese sandwich isn’t welcome in a cocktail party, but there are many other ways to enjoy the goodness of good ole queso, yes?
Coconuts Manila caught up with Karla Reyes during the media event of her cheese buffet service La Petite Fromagerie. She gladly gave us ideas on how to enjoy cheese when with wine-slinging friends.
1. Cacio e pepe frittele
Cacio e pepe is literally translated as “cheese and pepper,” and is a well-loved Italian favorite. It is usually served as a pasta dish, but Karla’s version has an interesting twist. She serves cacio e pepe fritelles, fritters made from cheese and pepper! Perfect for cocktail parties. Super yum!

2. Cheese raclette
This is the undeniable star of the buffet service. Of course the best way to enjoy raclette cheese is to have it melted. Karla likes it with boiled marbled potatoes and pickled white pearl onions. We also tried it on top of The Plaza’s pastrami — heavenly combination!

3. Malakoff
Malakoff is a traditional Swiss dish made from deep fried cheese batter. It is usually served as big as a pan de sal, but Karla’s version is bite-sized to make it easier to serve in parties. Tip: You can always get two or three pieces if you think that one is not enough.

4. Brie
Brie is good with apricots, figs, and truffle honey. If Karla had a cafe, she would serve brie in puff pastry with strawberry jam (We are so looking forward to that!).

5. Tête de Moine
The fun part ofhaving Tête de Moine is winding the machine to get cheese shavings. It is best enjoyed on its own, or with crackers. Of course, a glass of wine would match the flavors too. We had ours with wine from Happy Living Philippines, which graciously provided the wines at the event.
