The Pawn dark ages are officially over: they’re back in business starting TODAY!

If you can hear symphonies going off in your ear or you catch yourself belting out the Hallelujah chorus, you’re not (completely) weird, because it’s all for a good reason, because The Pawn is officially back in business!
 
After having undergone a two-month revamp, the beloved Wan Chai restaurant has reopened its doors in the same beautiful building. Drinks are already available in the Botanicals Bar, and Wednesday will see the launch of the newly designed menu.

And the best part? The Pawn will now be overseen by (the rather dishy) Michelin-starred chef Tom Aikens who promises to bring a refreshed culinary experience to this old Hong Kong favourite. 

Driven by creativity, innovative combinations, and a taste for fine ingredients, Aikens will mix casual and high-end cooking styles to bring dishes like pig’s trotter packets with sorrel and red wine egg, and 12-hour spiced lamb shoulder with dried fruit and chickpeas.

Confit salmon with vanilla tapioca, grapefruit and pomelo

For those with an affinity for something from the sea, offerings will include confit salmon with vanilla tapioca, grapefruit and pomelo, and razor clams paired with mitsuba, black garlic and pickled white radish. 

And they’re also going to launch a weekend brunch menu! What a way to kick off a lazy/drunken Sunday, eh?
