Baltic Blunos: Michelin-starred chef brings Baltic-style fine dining to Thonglor

Martin Blunos, a British-born culinary superstar with Latvian roots, has teamed up with Latvian chef Aleksandrs Nasikailov to open a one-of-a-kind fine dining restaurant in Bangkok: Baltic Blunos.  

Blunos, a two-Michelin star awardee, and Nasikailov aim to take Baltic cuisine to a luxury level with their new joint project. Said Blunos: “Baltic cuisine is very earthy and fresh; the ingredients must be fresh and cooked at its best. I think it will be very fascinating to introduce Baltic cuisine to Thailand. I am extremely excited to introduce and showcase what Baltic cuisine is to every guest and I am certain that it will be a very interesting mix of cultures.”

Under the concept “Baltic Crossover,” which intends to fuse a Baltic gastronomic experience using key Asian ingredients, the fine dining spot currently has two tasting menus on offer — a six-course (THB2,900) set, and an eight-course set (THB3,400). They feature dishes like sea urchins with yellow coulis and bergamot foam; mackerel, partly cured and partly cooked, served with beetroot and horseradish cream; and foie gras tortellini with hed poh puffball mushrooms.

Thailand’s tropical ingredients, like white morning-glory or moonflower, get a Baltic twist, too, stuffed with cream cheese puree made from wild almonds, topped with tom kha broth and paired with kombucha.

There’s also a dessert that focuses entirely on one luscious tropical fruit — coconut — by compiling coconut ice cream with caramelized coconut, roasted coconut, coconut jelly and cream. Another dessert is the Petite Four, a chocolate box with 14 pieces of homemade chocolates that come in a variety of flavors, from mango-passionfruit and Thai tea-mint to Riga Black Balsam (traditional Latvian herbal liqueur.)

Baltic Blunos is open from 6pm through 10pm, Tuesday through Sunday. It is located on Soi Thonglor 9.
