Three to try: Burnt cheesecakes in Singapore

Cheesecakes are already one of mankind’s best gifts to our diets – but Basque-style burnt cheesecakes? They’re on a whole other level of indulgence, with their charred-like exterior and gooey, molten center.

They’re not a new revelation, neither do they look the prettiest, but their cheesy, savory, and sweet filling will convince you to put down the camera and pick up a fork before someone else finishes your slice.

Fat Belly

This Bukit Timah eatery may be known for its prime, uncommon cuts of beef, but it also plates up a mean scorched cheesecake ($12/slice). Once you’ve gotten over the meat sweats, treat yourself to Fat Belly’s version of the trending dessert, served with passion fruit drizzle and cherries to cut through each rich bite.

Fluff Bakery

Beloved for its halal treats, the Bugis bakery has been a hotspot for sweet tooths since it started out in 2012. Fluff’s cupcakes are a must-try – they come in intriguing flavors like Earl Grey pear honey, Snickers, and chocolate cheesecake brownie – but it also takes orders for cakes in flavors like ondeh ondeh, olive oil orange rosemary, and Ferrero Rocher.

What’s been steadily gaining popularity though, is its Basque burnt cheesecake ($72/whole cake), a jiggly confection that holds a creamy, custard core. The best part is, you can get it delivered to your doorstep.

One of the more popular names to dish out the dessert, Olivia’s rendition of the cheesecake ($14/slice, $80/whole cake) is made in-house on a crumbly almond sable base, with the addition of blue cheese for a hint of funk. It’s Instagram-famous, too, which means you’ll have to order it early on in your meal before it sells out.
