Founded in 2015, Compendium (known then as Rachelle the Rabbit Meadery) started out as Singapore’s first-ever meadery, with founder Simon Zhao dedicating a line of fermented honey wines to his newborn daughter, Rachelle. Fermented from gula melaka (palm sugar) and infused with juniper berries, pandan leaves and coconut, this sweet and mellow gin is a delightful recreation of the familiar local dessert. With a long and fragrant finish topped with lingering pandan and coconut notes, the Chendol Gin is a perfect balance of subtle yet potent flavors.
Singapore’s first-ever rum, this is a light and clear rum produced by meticulously fermenting molasses for four weeks and double distillation. A wonderful base for cocktails, use this in a simple refreshing mojito or as the song goes, if you like pina coladas…
Known as one of the oldest spirits in the world, arrack is a rare spirit produced only in certain parts of Asia. Melaka Arrack features a toasted dry finish, light caramel notes, with a hint of regionally-foraged stone fruits. This is best served neat over ice or enjoyed with fizzy ginger ale in a cocktail.
