Weekend Eats: Tasty, No-Meat Patties from Banana Skins

Yep! You read that headline right. Made some banana-Q or turon this weekend? Avoid waste and make these meatless patties with the banana skins!

Ingredients:
Skin of 5-8 ‘Saba’ (Filipino plantains or Cardava bananas, cleaned well and boiled)
1 small carrot, peeled and grated
6 garlic cloves, finely chopped
1 medium onion, finely chopped
2 tsp brown sugar
2 tbsp soy sauce
1 egg
1 beef bouillon cube
1/4 tsp salt
1/4 tsp pepper

Time to make the patties!

First, clean the banana skins well and boil it in salted water for about 15 minutes or until fork tender.

Once the banana skins are tender and cool to the touch, chop it finely ’til it looks like cooked ground meat.

In a bowl, mix all the other ingredients together. Chill the mixture for at least 30 minutes before shaping into patties.

Form patties to desired size and shallow fry until golden brown. Serve warm with your choice of dipping sauce: ketchup, sriracha-mayo, or even barbecue sauce.
